Keeping up with food and beverage trends is crucial to develop the right menu mix. Each year, the American Restaurant Association surveys professional chef members of the American Culinary Federation. The latest survey was based on the input of more than 1,800 chefs. Respondents ranked 214 items by how trendy they would be in 2010.

  Year-round "shop and stay" packages are common across the country in states with large outlet malls and shopping centers, but New Hampshire hotels and inn operators claim an extra advantage in the state's distinction as the only one in New England without a sales tax.
